Ready for Game Day

Whether you have watched the games all season or just watching the big finale, it is Super Bowl weekend!  For many it’s a time for celebration, time with friends, and some good snacks while you watch the game on the big screen.  While being on dialysis doesn’t limit the fun you can have celebrating the big game, you do want to make sure you have food options available that leave you feeling that you’ve made a touchdown and didn’t make a fumble.  

For those on dialysis, it’s important to choose foods and snacks that are low in phosphorus, potassium, and sodium. The kidneys are unable to remove these minerals from the body, which can lead to bone and heart issues.  Below are a few of our favorite game day recipes that will satisfy your cravings, but will also be enjoyed by all those you share it with.  

TIP: Avoid beer as it is high in phosphorus, instead opt for ginger ale (include in your daily fluid limit)

SWEET AND SPICY KETTLE CORN

Adapted from Renal Diet Cookbook: The Low Sodium, Low Potassium, Healthy Kidney Cookbook

  • 3 tablespoons olive oil
  • 1 cup popcorn kernels
  • 1/2 cup brown sugar
  • Pinch cayenne pepper

Place a large pot with lid over medium heat, add olive oil and a few kernels. Once kernels start to pop add remaining kernels and sugar. Place the lid on the pot and shake the pot until kernels are all popped. Sprinkle it with cayenne and serve.

CINNAMON TORTILLA CHIPS

Adapted from Renal Diet Cookbook: The Low Sodium, Low Potassium, Healthy Kidney Cookbook

  • 2 Tablespoons white sugar 
  • ½ teaspoon cinnamon
  • Pinch of nutmeg
  • 3 (6-inch) flour tortillas
  • Cooking spray

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper. Stir together sugar, cinnamon, and nutmeg in a small bowl.  Lightly spray the tortillas with cooking spray and cut each tortilla into 16 pieces.  Lay tortillas chips on the baking sheet and sprinkle with the sugar mix.  Bake for 10 minutes, turning once. Enjoy once cooled or story for up to a week in a sealed container.
